Monte Cardón is a private culinary estate set atop a hill in the East Cape of Los Cabos, 25 minutes from the main square of San José del Cabo — a true gem to be discovered. Twenty-six acres of Baja desert open here into a sequence of stone terraces that reveal the Sierra de la Laguna to the west and the blue of the Sea of Cortés to the south. In the last hour of light the mountains take on layer upon layer of hue, unveiling the most magnificent sunsets of the Baja, while the breeze crosses the estate carrying the coolness and the salt spice of the sea — alive, unhurried, brushing the skin as the view unfolds.

The estate was born from the dream of a married couple. Chef Ubaldo Martínez and his wife, Ourem, raised it together over years, out of a shared passion for hospitality, for the culinary arts, for nature, and for this land they love. What began as a life shared between two people became a place made to be shared with others beginning theirs.

The architecture was conceived as if the estate were rising from the ground itself. Granite from the hillside became walls, local woods became beams, the earth beneath became terracotta — and every surface carries the color of its own soil. Terroir turned into architecture. A home to be shared, long before it is a venue.

    At Monte Cardón the culinary experience stands level with everything else on the estate. The menu is composed by the founding chef who created this property — so the food becomes an essential part of the experience.

    Our cuisine is contemporary Mexican with a Baja-Mediterranean soul, rooted in the slow food philosophy: cooking that honors provenance, season and craft, and preserves the Mexican heritage Chef Ubaldo carries with pride in his roots. What reaches the table is drawn from the ranches, farms and boats within thirty miles of this kitchen, prepared with technique, intention and meaning.

    Every menu is created together — tailor-made between each couple and Chef Ubaldo Martínez, who designs the culinary direction of every celebration personally, alongside you.
